The leaves on the cabbage leaves are usually thick, making them very firm, hard to peel, and heavy-handed. Meanwhile, Chinese cabbage has thin inner leaves that make it appear spongy, less tight, easy to peel.
About the taste
These two cabbage flavors are very different. While Chinese cabbage is light, even without its taste, the Vietnamese variety has a slightly pungent, characteristic aroma.
